Ingredients

  • 4 Roma tomatoes, diced small
  • 1 tbsp extra virgin olive oil
  • 2 cloves of garlic, whole
  • 1 bunch of fresh basil leaves, torn by hand
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  • Preheat the oven to 400 degrees F.
  • Combine the tomatoes, olive oil, basil salt and pepper.
  • Brush the slices of bread with olive oil and bake until lightly toasted, when
    toasted rubbed the garlic cloves on the warm bread allowing the garlic
    essential oil to penetrate into the bread.
  • Topped the bread with tomato mixture few leaves of basil leaves and a
    drizzle of olive oil.

Chef Notes: A simple classical recipe based on the region of Toscana where all the main ingredients are part of the culture southern part of Italy. Orecchietta means little ear, the main ingredient is wheat.
