Baked Scallops with Coconut XOXO Sauce Recipe

Baked scallops are a delicious and easy-to-make recipe. They’re perfect if you want to eat something tasty, with few ingredients and a short preparation time. In about 4 minutes they’re ready to go!

We’ve created this dish with an XOXO Sauce, an innovative product co-created by Chef Marvin Palomo, one of Chef Dario’s former students and now a close friend!

Chef Marvin tells us on the XOXO website that this sauce contains three varieties of dried shrimp, dried scallop, dried chili, peanut oil, fermented black bean, onion, garlic, tamarind, palm sugar, and fish sauce. It has rapidly become the favourite condiment for many people due to its perfect combination of taste and texture.

Baked Scallops with XOXO Sauce

Serves 1
Created by: Chef Marvin PalomoBaked Scallops with Coconut XOXO Sauce Recipe


2 pc fresh scallops
300 mL Coconut Milk
2 tbsp. oil
1 pc shallot
1 clove garlic
1 gram ginger
2 tbsp. XOXO Sauce
1 tsp. fish sauce


Thinly slice the scallops and place them back in the shell.
Lightly sauté shallot, garlic, and ginger in a sauce pot. Add coconut milk and XOXO Sauce and bring to a quick boil. Season with fish sauce.
Pour sauce over scallops and broil in the oven for 2-4 min.
Serve hot with rice or bread.
